The one main category on a Google Business Profile, the field Google leans on most to decide which searches a profile is relevant for.

The primary category is the single category that describes what a business is, chosen from Google's fixed list (for example Dentist, Plumber or Italian restaurant). Additional categories can describe other services, but the primary one carries the most weight for relevance in the map pack.

The practical way to choose it is to look at the primary category of the businesses already in the map pack for your main search, then pick the narrowest one that is accurate for you. Changing it later can trigger a new verification check.
